The Magic of the Flor

Sotovelo is not a Sherry—it's a still, dry white wine—but it is crafted using the same exceptional biological ageing process.  

Grape: 100% Palomino

Terroir: Sourced from the famous, chalky-white Albariza soils of Pago Balbaona which impart a distinctive minerality.  

Ageing: The wine rests for 8 months in old wooden barrels beneath a layer of flor—a veil of natural yeast that protects the wine from oxidation while imparting its unique flavour signature.  

Tasting Notes

The flor ageing gives Sotovelo a fascinating profile that perfectly balances freshness with complexity.

Aroma: A complex and spellbinding nose of almond, toasted bread, and sourdough, interwoven with bright citrus, green apple, and a hint of nectarine.  

Palate: Bone-dry, clean, and refreshing. The palate showcases a profound saline, mineral, and umami (savoury) character that is incredibly moreish. It’s silky, elegant, and intensely flavourful.  

Finish: Perfectly crisp and dry, with very low residual sugar (less than 1g/L), leaving a long, clean, and refreshing finish that begs for food.
