White Castle Vineyards Sparkling Welsh Wine
White Castle Sparkling Welsh Wine is a dry, delicate, aromatic white wine made from a blend of Phoenix and Seyval Blanc grapes grown just outside Abergavenny in the beautiful Monmouthshire countryside in South East Wales.
This elegant Brut, traditionally made sparkling wine is pale straw in colour with hints of Elderflower and Gooseberry on the nose. It has balanced acidity and on the palette there's a delicate mousse with good structure and biscuity flavours indicative of yeast lees ageing. Classic and elegant this sparkling Welsh wine from White Castle Vineyards is perfect for toasting special occasions.
The grapes for this wine were hand harvested in 2019 and the juice fermented in stainless steel vats. In 2020 the wine was inoculated with a small amount of yeast to induce the secondary fermentation and bottled. The best Champagnes and Sparkling wines are made by méthod champenoise which requires a secondary fermentation in the bottle. The wine continued to sit on the lees for a further 38 months before being disgorged.

Sparkling wine tends to go very well with appetizers. This gorgeous sparkling Welsh wine also goes well with fish and very light meats, and of course as an after-dinner celebration or toast.

ABOUT WHITE CASTLE VINEYARD
White Castle Vineyard is a Welsh vineyard situated near the market towns of Abergavenny and Monmouth it is owned and run by Robb and Nicola Merchant. They are dedicated to producing a variety of quality Welsh wines using first class viticulture practices - their wines have won multiple awards locally, nationally and worldwide.
Having purchased the 12 acre small holding in 1995 they converted the milking parlour into their home a year later, however it was 2008 before the dream of owning a vineyard become a reality, the 5 acre gently sloping, south facing field was purchased, soil tests were performed and vines ordered.
May 2009 saw the planting of 4000 vines, the varieties of vines planted were Pinot Noir, Regent, Rondo, Seyval Blanc & Phoenix, now there was no turning back, May 2010 saw a further planting of 800 vines this variety being Siegerrebe.
May 2019 marked their 10 year Anniversary since first planting and to mark this milestone they have planted a further 2000 vines these varieties are Pinot Noir and Cabernet Franc.
Robb & Nicola have attended Plumpton College East Sussex to study viticulture, this training giving them the skills needed to produce quality Welsh Wines.
